The Role
As Sushi Chef de Partie, you will work closely with the Sous Chef and wider kitchen team to run the sushi section efficiently, contribute to menu development, and maintain the highest standards of quality and organisation. This role is ideal for a driven chef with a passion for sushi looking to develop within a fast‑growing, ambitious restaurant group.
Key Responsibilities
- Manage and run the sushi section during service, ensuring consistency and quality at all times
- Prepare, slice and present sushi, sashimi, and other raw dishes to brand standards
- Maintain excellent organisation and mise en place on your section
- Uphold strict food hygiene, health & safety and HACCP standards
- Ensure proper handling and storage of fish and seafood
- Monitor stock levels, minimising waste and supporting ordering processes
- Work efficiently in a fast‑paced, high‑volume kitchen environment
- Support and mentor junior chefs, contributing to their training and development
- Collaborate with senior chefs on menu development and new dish creation
Requirements & Skills
- Previous experience as a Sushi Chef de Partie or strong Demi Chef de Partie in a high‑quality kitchen
- Strong knowledge of sushi preparation, knife skills, and fish handling
- Passion for Japanese cuisine with strong attention to detail and presentation
- Solid technical skills and strong kitchen fundamentals
- Excellent organisation and time management under pressure
- Strong teamwork skills with a proactive and positive attitude
- Desire to grow and progress within an ambitious restaurant group
- Full right to work in the UK (pre‑settled or settled status if applicable)
