As Head Waiter, you will play a key leadership role within our award-winning restaurant, ensuring every guest receives warm, intuitive and seamless service that exceeds expectations.

Working closely with the Restaurant Management Team and Kitchen Brigade, you will lead service on the floor, inspire and develop colleagues, maintain impeccable standards, and create memorable dining experiences for every guest.

You will be an ambassador for Longueville Manor, demonstrating professionalism, attention to detail and genuine hospitality at every opportunity.

Key Responsibilities

  • Lead restaurant service with confidence, professionalism and warmth.
  • Welcome guests personally and ensure every interaction reflects our five-star standards.
  • Build rapport with guests, recognising returning visitors and anticipating individual preferences.
  • Ensure every guest enjoys an exceptional dining experience from arrival through to departure.
  • Handle guest feedback and resolve any concerns promptly, professionally and positively.
  • Maximise guest satisfaction while creating memorable experiences that encourage repeat visits.
  • Supervise and motivate the restaurant team during service.
  • Allocate sections and responsibilities to ensure smooth, efficient operation.
  • Lead by example, setting the highest standards of service, professionalism and presentation.
  • Coach, mentor and support team members to develop their confidence and skills.
  • Assist with the induction and training of new employees.
  • Foster a positive, collaborative and respectful team culture.
  • Identify future talent and make recommendations for promotions and development.
  • Ensure the restaurant is fully prepared before every service.
  • Monitor service flow, ensuring food and beverages are delivered accurately and efficiently.
  • Liaise closely with the kitchen regarding menu availability, dietary requirements and daily specials.
  • Conduct pre-service briefings with the team.
  • Ensure menus, wine lists and beverage lists are accurate, clean and beautifully presented.
  • Verify guest bills for accuracy before presentation.
  • Maintain excellent working knowledge of the EPOS system.
  • Assist with staff rotas and shift organisation when required.
  • Arrange suitable cover for staff absences where possible.
  • Regularly review reservations, event sheets and function requirements.

  • Ensure the still room, cellar and restaurant are clean, organised and ready for the next service.
  • Ensure all equipment is safely stored and electrical appliances switched off at the end of service.
  • Maintain the highest standards of cleanliness, organisation and attention to detail.
  • Promote a safe working environment for both guests and colleagues.
  • Ensure compliance with all Health & Safety, Fire Safety and Food Safety procedures.
  • Report hazards or maintenance issues promptly.
  • Follow all licensing regulations and company procedures.
  • Support security procedures for guests, colleagues and premises.
