As a Demi Chef de Rang, you will support the Chef de Rang and Head Waiter in delivering seamless, attentive and personalised service throughout every shift.
You will assist in the smooth running of your allocated section, help mentor Commis Waiters and continually develop your own knowledge of food, wine and luxury service.
This role is ideal for someone looking to take the next step towards becoming a Chef de Rang.
Key Responsibilities
- Deliver warm, friendly and professional service in line with our five-star standards.
- Ensure every guest receives attentive, discreet and personalised service.
- Use guests' names whenever possible and anticipate their needs.
- Respond positively and efficiently to guest requests.
- Report guest feedback and comments promptly to the Head Waiter or Restaurant Manager.
- Be an ambassador for Longueville Manor, creating memorable experiences through genuine hospitality.
- Support the Chef de Rang in the smooth running of your assigned section.
- Take responsibility for running a section when required.
- Assist with food and beverage service throughout each shift.
- Perform silver service when required.
- Prepare and serve snacks, Afternoon Tea and other food offerings to company standards.
- Deliver Room Service efficiently and professionally.
- Ensure all Room Service trays are checked before delivery.
- Maintain your station to the highest standards of cleanliness, organisation and presentation.
- Ensure food is transported safely and efficiently between the kitchen and restaurant.

You will confidently explain menu items, recommend cheeses, desserts and beverages, and actively maximise sales through knowledgeable and enthusiastic recommendations.
- Support and assist the Chef de Rang throughout service.
- Help supervise and guide Commis Waiters.
- Check the quality and completion of work carried out by junior team members.
- Assist with station preparation and mise en place.
- Work collaboratively with both the restaurant and kitchen teams to ensure smooth service.
- Take every opportunity to learn, develop and build your skills within luxury hospitality.
- Prepare your station before every service to ensure it is fully operational.
- Liaise closely with the Chef de Rang to ensure mise en place is completed to the highest standard.
- Follow all restaurant cleaning schedules and procedures.
- Complete all assigned duties efficiently and to company standards.
- Answer telephone enquiries professionally and accurately.
- Maintain an excellent knowledge of the hotel, its facilities and guest services.
- Be familiar with the layout of the hotel and confidently deliver Room Service using the most efficient routes.
- Maintain impeccable personal presentation and grooming.
- Attend all departmental meetings, training sessions and daily briefings.
- Follow all Food Safety, Fire Safety and Health & Safety procedures.
- Work safely and professionally while maintaining the highest standards of cleanliness and hygiene.
- Support a positive, respectful and collaborative team environment.
