We are looking for an enthusiastic and ambitious

Demi Chef de Partie who is eager to develop their culinary skills within a professional, high‑performing kitchen.

This is an excellent opportunity to work alongside experienced chefs, take greater responsibility within your section and build a successful career in luxury hospitality.

As a Demi Chef de Partie, you will support the Chef de Partie in the day‑to‑day running of your designated kitchen section, helping to produce exceptional dishes while maintaining the highest standards of quality, hygiene and organisation.

You will play an important role within the kitchen brigade, developing your technical skills, supporting junior chefs and preparing yourself for progression to Chef de Partie.

Key Responsibilities

  • Assist the Chef de Partie in the smooth operation of your designated kitchen section.
  • Prepare, cook and present dishes to the exceptional standards expected at Longueville Manor.
  • Maintain consistency in food quality, presentation and portion control.
  • Ensure your section is fully prepared with excellent mise en place before every service.
  • Check the quality of ingredients and ensure all produce meets our high standards before use.
  • Support the delivery of exceptional dining experiences through careful preparation and attention to detail.
  • Organise your section efficiently to ensure a smooth and productive service.
  • Store deliveries promptly and correctly, following FIFO (First In, First Out) stock rotation procedures.
  • Assist with stock control and minimise food waste through careful preparation and organisation.
  • Ensure daily kitchen records and food safety documentation are completed accurately when required.
  • Report equipment faults, shortages or operational issues promptly to senior chefs.
  • Accept responsibility for your section in the absence of the Chef de Partie where appropriate.
  • Work closely with the Chef de Partie, Sous Chef and Executive Chef to deliver consistently high standards.
  • Support and assist Commis Chefs, offering guidance and encouragement where appropriate.
  • Demonstrate a positive attitude and willingness to learn every day.
  • Build confidence by taking on increasing responsibility within your section.
  • Actively work towards progression to Chef de Partie through continuous learning and development.

Skills, Knowledge and Expertise

  • Maintain exceptional standards of cleanliness and organisation throughout your section.
  • Ensure all food is prepared, stored and handled safely in accordance with Food Safety legislation and HACCP procedures.
  • Maintain all kitchen equipment, utensils and workspaces in excellent condition.
  • Follow all Health & Safety, Fire Safety and Food Hygiene procedures.
  • Maintain impeccable personal hygiene and professional presentation at all times.
  • Attend all training sessions, team briefings and departmental meetings.
  • Continue developing your culinary techniques and product knowledge.
  • Work towards achieving an Intermediate Food Hygiene Certificate.
  • Demonstrate ambition, initiative and a commitment to building a long‑term culinary career.
  • Stay informed about seasonal produce, modern cooking techniques and industry trends.

  • Professional culinary qualification.
  • Level 2 Food Hygiene Certificate.
  • Good understanding of kitchen operations, food preparation and food safety.
  • Strong organisational and time management skills.
  • Ability to work effectively in a fast‑paced environment.
  • Intermediate Food Hygiene Certificate (or willingness to achieve).
  • Previous experience within a Relais & Châteaux or Michelin-starred kitchen.
  • Experience supervising or supporting junior chefs.
  • Passion for seasonal and locally sourced ingredients.
  • Ambition to progress towards Chef de Partie and beyond.
