We are looking for an enthusiastic and ambitious Commis Chef who is passionate about food and eager to build a career in luxury hospitality.

This is an exciting opportunity to develop your culinary skills, learn from an experienced brigade and work in one of the Channel Islands' leading five‑star kitchens.

As a Commis Chef, you will support the kitchen brigade in the preparation, cooking and presentation of exceptional dishes while maintaining the highest standards of cleanliness, organisation and food safety.

Working alongside experienced chefs, you will develop your technical skills, gain exposure to a variety of kitchen sections and build the foundations for progression to Demi Chef de Partie and beyond.

You will be encouraged to

  • Work towards further Food Hygiene qualifications.
  • Progress to Demi Chef de Partie through ongoing learning, coaching and practical experience.

Key Responsibilities

  • Assist in the preparation, cooking and presentation of dishes to the exceptional standards expected at Longueville Manor.
  • Prepare ingredients accurately and efficiently following recipes and guidance from senior chefs.
  • Ensure consistency in food quality, presentation and portion control.
  • Assist with mise en place to ensure each service runs smoothly.
  • Handle ingredients with care and respect, maintaining quality at every stage of preparation.
  • Continuously develop your culinary techniques and product knowledge.
  • Support the smooth day‑to‑day operation of the kitchen.
  • Work collaboratively across kitchen sections as required.
  • Organise your workstation to ensure efficiency throughout service.
  • Assist with deliveries and ensure ingredients are stored correctly using FIFO (First In, First Out) principles.
  • Help minimise food waste through careful preparation and good stock management.
  • Report equipment faults or operational issues promptly to senior chefs.
  • Maintain exceptional standards of cleanliness and organisation in all kitchen areas.
  • Follow all Food Safety, HACCP, Health & Safety and Fire Safety procedures.
  • Ensure kitchen equipment, utensils and workstations are cleaned and maintained correctly.
  • Maintain excellent personal hygiene and professional presentation at all times.
  • Work safely and responsibly while supporting a clean and organised kitchen environment.
  • Work closely with Demi Chef de Parties, Chef de Parties and Sous Chefs to support service.
  • Demonstrate enthusiasm, professionalism and a willingness to learn every day.
  • Listen to feedback and use it to continuously improve your skills.
  • Build confidence by taking on increasing responsibility as your experience grows.
  • Attend all training sessions, team briefings and departmental meetings.

Skills, Knowledge and Expertise

  • Level 2 Food Hygiene Certificate (or willingness to obtain).

  • Good organisational skills and willingness to learn.
  • Ability to work effectively in a fast‑paced environment.
  • Previous experience within a four or five‑star hotel, fine dining restaurant or quality establishment.
  • Passion for seasonal and locally sourced ingredients.
  • Ambition to progress within a luxury kitchen environment.
