As a Chef de Rang, you will be responsible for managing your own section, ensuring every guest receives attentive, knowledgeable and seamless service throughout their dining experience. Working closely with the Head Waiter, Restaurant Management Team and Kitchen Brigade, you will deliver exceptional service, maintain the highest standards of presentation and support the development of junior team members. You will be a proud ambassador for Longueville Manor, creating memorable moments through genuine hospitality, professionalism and attention to detail.

Key Responsibilities

  • Provide warm, welcoming and personalised service that reflects our five-star standards.
  • Manage your section confidently and efficiently throughout service.
  • Build rapport with guests, using guest names wherever possible and anticipating individual preferences.
  • Ensure every guest enjoys a memorable dining experience from arrival to departure.
  • Respond professionally to guest requests and communicate feedback to the Head Waiter or Restaurant Manager.
  • Deliver discreet, attentive and intuitive service at all times.
  • Take food and beverage orders accurately and confidently.
  • Develop an excellent understanding of all menus, daily specials and seasonal ingredients.
  • Recommend dishes, wines, cheeses and beverages to enhance the guest experience.
  • Maximise sales through knowledgeable recommendations of wines, cheeses, desserts and coffee.
  • Present and serve food and beverages to the highest luxury hospitality standards.
  • Carry out silver service where required.
  • Prepare bills accurately and process guest payments using the EPOS system.
  • Answer restaurant telephone enquiries professionally and efficiently.

Skills, Knowledge and Expertise

  • Develop and maintain excellent knowledge of seasonal food menus, wine list, bar menu, cheese selection, daily specials, allergens and dietary requirements.
  • Confidently explain dishes, ingredients and suitable food and wine pairings to guests.
  • Support the Head Waiter in delivering smooth and efficient service.
  • Delegate tasks appropriately to Demi Chef de Rang and Commis Waiters during service.
  • Assist with coaching and training junior members of the team.
  • Monitor standards within your section and provide guidance where required.
  • Be confident stepping into Head Waiter responsibilities when required.
  • Ensure your section is fully prepared before each service.
  • Liaise with the kitchen to ensure smooth communication throughout service.
  • Complete mise en place to the highest standard.
  • Assist with restaurant preparation and cleaning procedures.
  • Deliver room service in accordance with Longueville Manor standards.
  • Ensure room service trays are checked prior to delivery.
  • Maintain excellent knowledge of the hotel, its facilities and services.
  • Share your knowledge of Jersey and Longueville Manor's history to enhance the guest experience.
  • Maintain impeccable personal presentation and grooming.
  • Follow all Health & Safety, Fire Safety and Food Hygiene procedures.
  • Attend all team briefings, training sessions and departmental meetings.
  • Ensure all tasks are completed efficiently and to the highest standard.
  • Support a positive, respectful and professional working environment.
