Our award-winning restaurant The Estate Room offers refined 1 Rosette dining in a cozy, modern setting, with a menu inspired by the rich larder of Scotland. Our Brownie bar and The Library offer gastro pub dishes and Scottish classics.
We are looking for a passionate and ambitious Sous Chef to support the Head Chef in leading our kitchen brigade. This is a hands-on role ideal for a creative, confident second-in-command with a deep love for quality produce and seasonal Scottish cuisine.
What you'll do:
- Assist the Head Chef with the day-to-day running of the kitchen
- Maintain high culinary standards and consistency across all dishes
- Lead and motivate junior kitchen staff, ensuring smooth service and team morale
- Help design and deliver seasonal menus, daily specials, and tasting experiences
- Ensure strict food hygiene, safety, and cleanliness protocols are upheld
- Step up to lead the kitchen in the Head Chef's absence
