THE ROLE

Bar Eleganza is not a hotel bar or an afterthought. It is a destination - the city's home for the elegant drink. Aperitivo culture, Italian classics, Negroni served with ceremony, Casa di Martini, Bellini, Sgroppino. Walls of Italian wine. Musicality in the air. The Bar Manager is the maestro of this space. You will build the bar programme, lead a team of skilled bartenders, and set the standard for everything that is poured, stirred and served at GiGi. You will carry the soul of Bar Eleganza in everything you do.

WHAT YOU WILL DO

  • Own and develop the Bar Eleganza drinks programme - cocktails, aperitivo, amaro, Italian wine and spirits
  • Lead, inspire and develop the bar team; uphold the GiGi standard of craft and hospitality
  • Manage bar operations including stock control, ordering, costings and supplier relationships
  • Curate a seasonal cocktail menu that reflects the spirit of the golden age and GiGi's Italian identity
  • Ensure the bar environment is immaculate, theatrical and always ready for a long Italian evening
  • Collaborate closely with the kitchen team and front of house on events, pairings and experiences
  • Play an active role in training: elevating the team's knowledge of Italian spirits, wine and aperitivo culture
  • Manage labour scheduling and day-to-day bar operations efficiently

  • Proven experience as a bar manager or senior bartender in a high-quality bar or restaurant environment

  • A track record of delivering exceptional guest experiences
