The Retail Manager is responsible for leading and driving the commercial performance of retail and food & beverage operations across multiple sites of Leisure Focus. The role ensures consistent service standards, strong financial performance, regulatory compliance, and brand alignment across all locations. This position plays a key role in maximising secondary spend, improving operational efficiencies, and developing high‑performing management teams.

Key Responsibilities

  • Strategic Leadership & Commercial Growth
    • Develop and implement a retail strategy aligned to organisational goals
    • Drive revenue growth and maximise gross profit across all sites
    • Identify new income streams and commercial opportunities
    • Lead pricing, menu development, and promotional strategy
    • Benchmark performance across sites and drive continuous improvement
  • Financial Oversight
    • Oversee P&L performance for all retail operations
    • Monitor KPIs including revenue, GP%, labour cost, and stock variance
    • Develop and manage annual budgets and forecasts
    • Implement cost‑control initiatives without compromising quality
  • Operational Excellence
    • Ensure consistency in service delivery, presentation, and brand standards
    • Conduct regular site audits, oversee rota management and operational reviews
    • Standardise operating procedures across locations
    • Oversee stock control systems and supplier performance
  • Compliance & Risk Management
    • Ensure full compliance with Food Safety, Health & Safety, and licensing regulations
    • Maintain audit readiness across all sites
    • Oversee implementation of HACCP procedures
    • Monitor and manage risk related to food hygiene and stock handling
  • Leadership & Talent Development
    • Lead, coach and develop site‑based teams
    • Build succession plans for key roles
    • Support recruitment and onboarding of team members
    • Promote a strong customer‑focused culture across all sites
    • Drive engagement and performance management processes
  • Customer Experience & Brand
    • Ensure a consistent and high‑quality customer journey across all locations
    • Analyse customer feedback and implement service improvements
    • Align retail and catering operations with wider leisure operations
    • Collaborate with marketing teams on campaigns and promotions

Key Skills & Experience

  • Manager‑level experience in managing multi‑site retail and/or catering operations
  • Strong commercial acumen and P&L management experience
  • Proven ability to drive revenue growth in the leisure industry
  • Experience leading managers across geographically dispersed sites
  • Strong analytical and financial reporting skills
  • Knowledge of food safety and licensing regulations

Qualifications

  • Level 3 (or above) Food Safety Qualification (Essential)
  • Personal Licence (if alcohol is sold across sites) (desirable)
  • Relevant management qualification (desirable)
  • IOSH Managing Safely or NEBOSH (desirable)
