From the founders of the Michelin-starred Sabor, Chef Nieves Barragán Mohacho, in partnership with JKS Restaurants, is seeking a passionate and highly organised Kitchen Manager to be part of Legado. We are looking for an experienced Kitchen Manager who shares our enthusiasm, dedication, and passion for great food, vibrant hospitality, and delivering a unique culinary experience.
The Location: Legado opened its doors in August 2025 in the heart of Shoreditch, with a clear purpose: to celebrate the breadth and depth of Spain's regional cooking. A sister restaurant to Sabor, Legado builds on that foundation while carving out its own identity - exploring lesser-known dishes and traditions from across Spain, guided by seasonality, whole-animal butchery and a deep respect for craft and provenance. From the Taberna - Legado's tapas and pintxos bar - to the main dining room, the restaurant is defined by thoughtful cooking, precise technique and warm, considered hospitality. Founded by Chef Nieves Barragán Mohacho, Legado reflects a lifetime of experience rooted in Spanish culinary heritage. Nieves' cooking is shaped by memory, travel and a commitment to honouring the stories of each region. Just seven months after opening, Legado was awarded a Michelin Star - a testament to the dedication, talent and collective ambition of the team.
The Position: Reporting to the Executive Chef, the Kitchen Manager oversees all kitchen operations, ensuring high standards of quality, efficiency, and food safety. The role includes responsibility for inventory control, stock audits, ordering, and staff scheduling, alongside leading health and safety compliance, COSHH, and HACCP standards.
Key Responsibilities
- Manage inventory systems and conduct regular stock audits
- Oversee deliveries and organise stock effectively
- Control ordering to maintain optimal stock levels and minimise waste
- Support and maintain staff rotas to ensure adequate coverage
- Implement and manage cleaning schedules across BOH areas
- Ensure compliance with health and safety, COSHH, and HACCP
- Supervise the BOH team to maintain high standards of food preparation and presentation
- Monitor budgets and identify cost-saving opportunities without compromising quality
Requirements
- Experience as a Kitchen Manager/BOH Manager or a Senior Chef seeking a new challenge
- Strong understanding of seasonal produce and current food trends
- Proven ability to lead, train, and motivate a kitchen team
- Experience creating and managing staff rotas
- Solid knowledge of health and safety and compliance procedures
