Our client is looking for a Sous Chef for their independent Italian restaurant in Soho. The restaurant is fresh led and utilises some of the best ingredients within its dishes. The restaurant is part of a small group which has other restaurants which focus on other types of cuisine.
The successful Sous Chef will work alongside the Head Chef to assist them with the successful execution of the day to day needs of the kitchen together with kitchen management, rotas, ordering etc.
Purpose of the role:- Delivering food consistently to a high standard
- Ensuring the highest standards of food preparation & presentation in the kitchen
- Working within all kitchen sections
- Control wastage and portion size by supervising junior staff
- To be standards driven and have good organisational skills and a genuine passion
- Know the EHO requirements and be able to ensure the team deliver
- To plan, organise and control the day to day operation
- Check, record, and report temperatures of fridges and freezers in line with HACCP
- Actively participate in menu development, planning and production
The ideal candidate will have experience as either a Sous Chef or Head Chef, working within a restaurant which serves Italian food. It is essential that the Chef has a clear passion for food and wants to work within a busy kitchen environment.
