The predicted salary is between 24000 - 28000 £ per year.

The Prep Chef is responsible for preparing core savoury items such as croissants, club sandwiches, and croque monsieur to support the Ladurée UK retail and bar operations. This role replaces the previous kitchen brigade and will work independently, with oversight from the Area Manager or designated Operations Lead.

Key Responsibilities
  • Food Preparation
    • Prepare daily batches of savoury croissants (i.e. ham & cheese, turkey & béchamel) to recipe.
    • Assemble club sandwiches, croque monsieur, and other light prep items.
    • Support ad hoc food prep needs for events, seasonal activations, or store promotions.
    • Assemble macaron pyramids to required visual merchandising standards.
    • Prepare or assist with other savoury or sweet menu items as requested.
    • Maintain consistent quality and portion control.
  • Stock Control & Ordering
    • Monitor stock levels for ingredients and packaging materials.
    • Place daily or weekly kitchen orders via the internal procurement system (i.e, D365).
    • Maintain and update inventory records; ensure proper stock rotation (FIFO).
    • Responsible for labelling, traceability, and proper storage of all food items.
  • Food Safety & Hygiene
    • Comply with all food safety regulations including HACCP, allergen control, and traceability.
    • Keep prep area clean and sanitised during and after use.
    • Record fridge/freezer temperatures and hygiene checks as required.
  • Coordination & Oversight
    • Liaise with the Area Manager or designated Retail/Operations Lead for planning and task prioritisation.
    • Adapt to varying prep volumes based on store needs or delivery schedules.
    • Communicate proactively about delays, shortages, or maintenance needs.
Skills & Experience Required
  • Previous experience in a food prep, café, deli, or production kitchen environment.
  • Strong knowledge of savoury preparation, sandwich production, and portion control.
  • Ability to work independently and follow production plans without supervision.
  • Basic stock/order tracking experience and awareness of allergen procedures.
  • Excellent attention to detail, hygiene, and quality standards.
  • Flexible and adaptable to changing business needs.
Working Conditions
  • Shifts may start early depending on delivery needs.
  • Occasional weekend work required depending on trading patterns.
  • Uniform and meals provided during shift.
  • Position works independently without on-site Head Chef or Kitchen Manager.
