As Demi Chef de Partie, you will be a key member of the Old Course Hotel’s culinary team in the newly refurbished Road Hole Restaurant on the Hotel’s 4th Floor, overlooking the famous Old Course and West Sands. You will be primarily responsible for creating exquisite dishes to be served in the Road Hole Bar, a whisky bar that attracts whisky enthusiasts from around the world, and may support the 3‑AA Rosette Road Hole Restaurant as needed.
Responsibilities:
- Manage and oversee food production as directed by the Senior Team and present it at the times required.
- Maintain discipline in a fair and consistent manner, including time‑keeping.
- Provide your own basic set of equipment, such as knives, pallet knives, mini scales etc.
- Understand the menus and operating procedure of the kitchen and run your section accordingly.
- Ensure all HACCP systems are followed, and complete due diligence on a day‑to‑day basis with the team.
- Be fully conversant with departmental LQA standards.
Qualifications:
- Similar experience in a 5‑star establishment.
- Culinary education is preferred but not essential.
- Good knowledge of culinary terminology and techniques.
Hours: 10:30 am – 6:00 pm, Permanent Full‑Time, 40 hrs per week.
Salary: £28,930.33 + tronc.
