An exciting opportunity has arisen for a talented Chef de Partie to join the established kitchen brigade at one of Hertfordshire's most prestigious private country estates. Set within magnificent parkland and home to two championship golf courses, the estate operates a diverse hospitality offering encompassing clubhouse dining, weddings, private dining, corporate hospitality, member events and exclusive functions.
This is an excellent opportunity for a Chef de Partie who enjoys variety, fresh food and working as part of a close-knit brigade within a unique hospitality environment.
The estate delivers a wide range of food experiences across its clubhouse, function spaces and wider events operation. Food operations include:
- Clubhouse dining
- Weddings and celebrations
- Private dining
- Corporate hospitality

- Estate functions

Functions can range from intimate private dining for around 12 guests through to events for approximately 150, creating a varied kitchen environment where no two weeks are necessarily the same.
As Chef de Partie, you'll take responsibility for your section while supporting the wider estate kitchen operation across both everyday service and events. Working alongside the Estate Head Chef, Sous Chefs and wider brigade, you'll help ensure consistently high standards of preparation, presentation and organisation throughout the kitchen. Your responsibilities will include:
- Running your section confidently during preparation and service
- Preparing and presenting dishes consistently to agreed standards
- Working across clubhouse dining, functions, weddings and private events
- Supporting preparation and delivery for larger banqueting and hospitality events
- Working with seasonal menus, event menus, specials and bespoke dining requirements
- Maintaining excellent mise en place and kitchen organisation
- Ensuring high standards of food safety, hygiene and allergen control
- Supporting stock rotation, portion control and waste management
- Working collaboratively with the senior kitchen team and wider estate departments
- Supporting different areas of the food operation according to business requirements
We're looking for someone who has:
- Previous experience as a Chef de Partie or strong Demi Chef de Partie ready to progress
- Experience within a quality hotel, restaurant, country estate, golf club or events environment
- Strong fresh-food cooking skills
- The confidence to take ownership of a section
- Good organisation and attention to detail
- The ability to remain calm and consistent during busy services
- A good understanding of food safety, hygiene and allergens
- A positive, hands-on approach and strong team ethic
- Flexibility to work across different styles of service and events
- Experience within banqueting or events would be advantageous, although a strong Chef de Partie from a quality fresh-food background would also be considered.
Working Pattern:
- 48 hours per week
- Annualised contract reflecting the seasonal nature of the estate
- Peak season runs primarily from May through September, when hours are driven by business requirements
- Quieter periods during the winter outside of the Christmas season
- Full-time, permanent position
