An exciting opportunity has arisen for a talented Chef de Partie to join the established brigade at an impressive 5-star country inn with a 2 AA Rosette restaurant in East Sussex. Combining quality dining, boutique accommodation and a thriving destination trade, the property delivers accomplished seasonal food within a relaxed and characterful setting.
With around 80 covers during the week, rising to 100–150 covers across Friday to Sunday, this is an excellent opportunity for a CDP looking to strengthen their experience within a busy, award-winning kitchen.
The Kitchen
You'll join an established kitchen team of approximately 15, including:
- 5 experienced chefs
- 3 junior chefs
- 7 kitchen porters
It's a well-supported operation where you'll have genuine responsibility for your section while working closely with the senior chefs and helping develop junior members of the brigade.
The Role
As Chef de Partie, you'll take ownership of your section throughout preparation and service, helping maintain the standards expected from a 2 AA Rosette kitchen. Your responsibilities will include:
- Running your section confidently during preparation and service
- Preparing and presenting dishes consistently to a high standard
- Maintaining excellent mise en place and section organisation
- Working closely with the senior kitchen team during busy services
- Supporting and developing junior chefs
- Maintaining excellent food hygiene, allergen and Health & Safety standards
- Supporting stock rotation, portion control and waste management
- Keeping your section clean, organised and service-ready
- Contributing positively to a professional, team-focused kitchen
About You
We're looking for someone who has:
- Previous experience as a Chef de Partie, or a strong Demi CDP ready to progress
- Experience within a quality fresh-food pub, restaurant or hotel
- Rosette-level experience advantageous
- Confidence running a section independently
- Strong organisation and attention to detail
- The ability to remain calm and consistent during high-volume services
- A positive, hands-on approach
- Good communication and teamwork skills
- A genuine passion for quality food and continued development
