An outstanding opportunity has arisen for an ambitious Chef de Partie to join the growing brigade at an intimate 5-star restaurant with rooms on the beautiful coast of South West Scotland. Currently holding 3 AA Rosettes, this exceptional 10-bedroom property is entering an exciting new chapter under a recently appointed Executive Head Chef, with a clear ambition to continue developing the food offering and raising standards further.

The kitchen currently holds 3 AA Rosettes, delivering refined, produce-led cooking while drawing heavily on ingredients grown within the property's own kitchen garden and sourced from outstanding producers throughout South West Scotland. With only 10 bedrooms, the operation offers a very different environment from a large hotel kitchen. You'll become an important part of a small brigade, gaining excellent exposure to the food, the produce and the development of the restaurant as it moves into its next chapter.

The Role

As Chef de Partie, you'll work closely with the senior kitchen team while taking responsibility for your own section and contributing across the wider operation. Your responsibilities will include:

  • Running your section confidently throughout preparation and service
  • Preparing and presenting dishes consistently to 3 AA Rosette standards
  • Working with exceptional seasonal Scottish produce
  • Making full use of ingredients grown within the on-site kitchen garden
  • Maintaining excellent mise en place and organisation
  • Supporting the development and evolution of dishes and menus
  • Maintaining exceptional standards of presentation and consistency
  • Working collaboratively within a small, ambitious brigade
  • Supporting junior chefs where required
  • Maintaining excellent food hygiene, allergen and Health & Safety standards
  • Continuing to develop your own technical ability within a quality-led environment

About You

We're particularly interested in chefs who have:

  • Previous Chef de Partie or strong Demi Chef de Partie experience
  • Experience within Rosette, Michelin or comparable fine-dining kitchens
  • Strong classical and modern cooking foundations
  • A genuine passion for seasonal produce and ingredient-led cooking
  • Excellent attention to detail and presentation
  • The ability to run a section confidently
  • A strong work ethic and positive attitude
  • The desire to continue learning and developing technically
  • A willingness to relocate to South West Scotland for the right long-term opportunity

While previous accolades are advantageous, attitude, ability and genuine ambition are equally important, and the kitchen is open to considering chefs at different stages of their development.
