A rare opportunity has arisen for a talented Pastry Chef to join an intimate 1 Michelin Star Japanese Omakase restaurant in the heart of Mayfair.
With just 16 seats and a single Omakase menu, this is a precision-led restaurant where every course matters. The pastry offering forms part of a highly considered dining experience, giving the successful chef the opportunity to create refined desserts around seasonality, flavour balance and Japanese influences.

The Restaurant
The restaurant offers an intimate and highly focused Omakase experience, serving just 16 guests at a time in Mayfair.
The operation currently consists of:
- 1 Michelin Star
- Just 16 seats
- A single Omakase menu
- One lunch service at 12:30pm
- Two dinner services at 6:00pm and 8:30pm
- A highly detailed, precision-led style of dining
Rather than high-volume production, the focus is firmly on quality, detail, balance and presentation.
The Role
As Pastry Chef, you'll have the opportunity to take real creative responsibility for the restaurant's dessert offering.
You'll be involved in:
- Preparing and presenting high-quality restaurant desserts and pastry
- Developing new desserts and seasonal menu items
- Exploring flavours and ideas suited to a Japanese Omakase experience
- Maintaining exceptional consistency and presentation
- Managing preparation efficiently around the restaurant's services
- Maintaining excellent hygiene, food safety and stock standards
- Working closely with the wider kitchen to ensure pastry complements the progression of the Omakase menu
- Bringing your own creativity and ideas to the section
Importantly, the restaurant is offering creative freedom, making this much more than simply a production pastry position.
About You
You'll need a minimum of three years' professional pastry experience and strong technical foundations.
The restaurant is particularly interested in chefs with:
- Michelin-starred or similarly high-level restaurant experience
- Strong plated-dessert experience
- Excellent attention to detail and artistic presentation
- A sophisticated understanding of flavour and balance
- Creativity and an interest in developing new dishes
- Excellent organisation and consistency
- The ability to work confidently within a small, quality-focused kitchen
Experience with Japanese pastry, Wagashi, Japanese-fusion desserts or modern pastry techniques would be particularly attractive, although a strong chef from another high-quality pastry background can also be considered.

- Salary up to £35,000, depending on experience
