Position Summary
The Prep Cook plays a vital role in supporting the overall organization and efficiency of the kitchen. Reporting directly to the Chef de Cuisine, the Prep Cook is responsible for preparing, receiving, and organizing produce and ingredients for use by line cooks and sous chefs. By maintaining a high standard of food safety, hygiene, and organization, the Prep Cook ensures the kitchen runs smoothly and consistently delivers exceptional dining experiences.

Responsibilities
- Receive, wash, chop, and properly store produce and ingredients according to kitchen standards.
- Accurately label, date, and organize prepared items for easy use by the culinary team.
- Support line cooks and sous chefs by ensuring prep stations are fully stocked and organized for service.
- Follow all directions from the Chef de Cuisine while communicating effectively with all back‑of‑house staff.
- Maintain a clean, hygienic, and safe work environment at all times.
- Monitor food storage areas to ensure proper rotation (FIFO) and minimize waste.
- Adhere to food safety and sanitation standards in all prep and storage practices.
- Assist with unloading, inspecting, and organizing deliveries to ensure quality and freshness.
- Partner with the kitchen team to ensure smooth service flow and readiness for peak dining periods.
Special Projects/Tasks
- Assist with the preparation and organization of any on‑site or off‑site events.
- Support the execution of new menu items or seasonal changes through prep responsibilities.
Requirements
Availability:
- Open and flexible availability, including evenings, weekends, holidays, and special events.
Licenses/Certificates:
- Valid Food Handler’s or Level 2 Food Hygiene and Safety Certification (required).
Experience:
- 1+ years of experience in a professional kitchen environment (preferred).
- Experience in high‑volume or elevated dining settings is an asset.
Skills & Abilities:
- Strong organizational and time management skills.
- Ability to maintain high standards of hygiene and food safety.
- Ability to multi‑task in a fast‑paced environment.
- Physical ability to lift and move up to 13.6 kilos, bend, twist, and stand/walk for prolonged periods.
