Job Description
The Senior Director of Culinary Services Leader ensures the successful execution of Kisco’s overall dining services strategy, including the preparation, delivery, and presentation of culinary experiences across all communities. This role supports the development, coaching, and training of Culinary Services Directors, Food and Beverage Directors and dining associates to achieve the highest service levels and business results across all Kisco brands and operating models. The Culinary Services Leader designs programs and standards necessary to deliver a best-in-class dining experience while meeting all state and federal mandates. The role also involves continuous innovation and re-evaluation of community-specific dining venues and programs to keep the company on the leading edge of current trends and best practices within the senior living and hospitality industry.
What will I do every day?
- Oversee and direct the activities of the Home Office Culinary Services Team, including all Subject Matter Experts (SMEs), and dining specialists for all Kisco brands and operating models.•Develop and ensure the implementation of standard operational procedures for dining areas and kitchens to deliver exceptional resident and guest experiences.•Conduct operational reviews at all communities annually to ensure adherence to standards and identify areas for improvement.•Utilize monthly Key Performance Indicators to determine cost management needs, revenue opportunities, and leverage best practices.•Develop and implement wait staff training programs.•Train community leadership and staff on core dining programs and standards.•Support the development of new menus, menu cycles, and signature recipes.•Integrate The Art of Living Well℠and Life Enrichment into dining programs to promote the dimensions of wellness and balanced nutrition.•Review resident satisfaction with dining programs across all communities.•Collaborate with Executive Directors to develop action plans to improve satisfaction, sharing best practices organization-wide.•Support menu customization for residents with special dietary requirements, such as caloric count, gluten-free options, and sodium restrictions.•Support the dining services budgeting process for all communities.•Develop and ensure implementation of food service programs to meet/exceed annual dining services operating expenses and revenue goals.•Support revenue creation through alternate dining options, a la carte menus, point of sale, and catering.•Manage group purchasing efforts and vendor relationships with dining services.
- Support required state and federal guidelines for diets, weight management, and healthy eating.• Establish, ensure implementation, and revise policies, procedures, and performance standards as required.• Assist in planning and opening new communities.• Aid Executive Directors in sourcing, selecting, and onboarding dining services management staff, and support dining service staff hiring as needed.• Support sustainability, remodeling, and renovation processes for dining and culinary areas to achieve sales, revenue, and satisfaction goals.• Create recognition opportunities for promotion, publicity, and branding, such as Chef competitions and Signature Recipe Books.• Plan and execute a National Culinary Directors conference as outlined in our annual budget planning for all communities.• Other duties as assigned• Interface with Executive Directors, Community Management Team members and Home Office associates to meet their current need and/or request.• Interface, negotiate, network and build a solid working and mutually beneficial rapport with Home Office associates, building staff and outside vendors.• Set priorities and procedures by planning ahead and proactively gathering relevant information.• Communicate effectively and articulately with all levels of the organization to include interpersonal skills and behaviors conducive to a team-oriented environment.• Independently compose correspondence, reports, memoranda and other written materials.• Demonstrate a flexible attitude and the ability to manage multiple priorities and shifting demands.• Think analytically; intercept and resolve problems, show attention to detail.
What will I need to be successful in this role?
- Be a great team player
- College degree required. A Culinary or Hospitality Degree preferred.
- Certified Dietary Manager (CDM) and/or Certified Executive Chef (CEC) a plus.
- Must have a minimum 7 years of experience in dining services management. Regional experience strongly preferred.
- Experience in senior living management preferred.
- Serv-Safe certified or similar knowledge and certification for sanitation.
- Knowledge of HAACP policies and procedures.
- Training experience highly desirable.
- Excellent knowledge of computers and must have knowledge of Microsoft Office. Must have thorough knowledge of all aspectsof a dining services program and basic understanding of accounting and financial analysis.
