Kioku by Endo sits on the sixth floor of Raffles London at The OWO, the former Old War Office, with views across Whitehall, Westminster and the London skyline. Kioku means "memory" in Japanese. The menu tells the story of third generation sushi master Endo Kazutoshi's life, bringing together his Japanese heritage and his Mediterranean training.

As part of Creative Restaurant Group, we're looking for a talented Chef de Partie to join our brigade and grow with us.

The Role

As Chef de Partie, you will run your own section and help keep the kitchen running smoothly every service. Our menu covers nigiri and sashimi, prime meats and fish from the robata grill, and dishes with a Mediterranean influence, such as native lobster with fregola. You will work closely with the Head Chef, Sous Chefs and our sushi team, as one team delivering an experience like no other in London. That covers the main dining room, the chef's table and the private dining room in the turret. This is a brilliant opportunity for a chef who wants to deepen their knowledge of Japanese technique and produce, and build a lasting career in fine dining.

What You'll Be Doing

  • Running your section with pride, precision and consistency every service
  • Preparing and presenting every dish to the highest standard
  • Learning and respecting Japanese techniques, ingredients and the philosophy behind them
  • Working with the robata grill, sushi and pastry teams to keep service seamless
  • Managing your mise en place, ordering and stock rotation for your section
  • Supporting and guiding Commis and Demi Chefs de Partie
  • Following food safety, hygiene and allergen procedures at all times
  • Keeping your section clean, organised and ready for service
  • Taking part in briefings, tastings and ongoing training
  • Contributing ideas as the menu evolves with the seasons

What We're Looking For

Previous experience as a Chef de Partie or strong Demi Chef de Partie in a fine dining, Michelin starred or luxury hotel kitchen is essential. Japanese kitchen experience is a real advantage, but we are equally interested in chefs with excellent technique and a genuine wish to learn.

You will need:

  • A deep respect for produce and a real interest in Japanese cuisine
  • Strong technical skills and excellent attention to detail
  • The ability to stay calm, organised and focused during busy services
  • A team first attitude and clear communication in the kitchen
  • High standards of cleanliness and food safety
  • The drive to keep learning and develop your craft
  • Flexibility to work evenings, weekends and bank holidays

Salary: Up to £17.01 p/h, plus benefits

Why Join Us?

At Creative Restaurant Group, we want people to build careers, not simply fill roles. You will cook alongside one of the world's most respected sushi masters and an experienced kitchen team. As your skills develop, you'll have genuine opportunities to progress into Senior Chef de Partie and Sous Chef positions.

  • Cook in one of London's most remarkable rooftop restaurants
  • Learn directly from Chef Endo and his team
  • Hands on training in Japanese technique, sushi and robata cooking
  • Clear opportunities for career progression
  • The chance to grow across Creative Restaurant Group
  • 28 days paid holiday
  • Staff meals while on duty
  • Employee discounts across participating restaurants
  • Wagestream access to your earned pay

Bring your skill, curiosity and attention to detail to Kioku, and help us create dishes our guests will remember.

Note: Applicants must have the legal right to work in the UK without corporate sponsorship.
