The Role

As Sous Chef, you will work closely with our Executive Chef to lead a kitchen team that celebrates the beauty and integrity of Japanese produce. You will play a critical role in maintaining the highest standards of execution, contributing to menu development, and ensuring the kitchen runs smoothly during every service. Key Responsibilities

  • Proven experience as a Sous Chef in a high‑end, fine dining or Michelin‑recommended kitchen.
  • Deep respect and knowledge of Japanese produce, seasonality, and culinary techniques.
  • An understanding of the cultural values that shape Japanese hospitality and kitchen conduct.
  • Creative, hands‑on leadership with the ability to train and inspire junior chefs.
  • Strong organisational skills and calmness under pressure.
