We're recruiting a Culinary Director for an international premium hospitality group. The role covers both culinary development and culinary operations across private aviation, yachts, events, AND restaurants and hotels.
This is a rare role for a chef who wants to shape what goes on the menu and also make sure every kitchen delivers it to the same standard, every service. You'll report to the Global Culinary Lead and lead a team of development and culinary operations chefs.
What you'll do
Culinary development
- Set the development plan for core and seasonal menus across aviation, yachts, events, restaurants and hotels
- Create new restaurant and hospitality concepts, from menu architecture through tastings to launch
- Build bespoke menus for major clients, pitches and openings, and present them with confidence
- Develop food that keeps its quality through transport, holding and reheating
- Turn a founder's, brand's or partner chef's vision into a menu operating teams can deliver
Culinary operations
- Own food standards across every kitchen through site visits, audits and service reviews
- Write and maintain SOPs, recipe specifications and allergen data
- Drive food cost and GP performance with Finance and Procurement
- Lead pre-opening readiness: kitchen design input, team training and trial services
- Lead the handover of new menus into production and stay with them until they run consistently
What we're looking for
- Senior culinary leadership with both development and operational responsibility across multiple sites, brands or channels
- A track record of taking menus and concepts from idea to consistent delivery
- Strong control of food cost, GP, labour and supply
- Cooking range across casual, premium and fine dining formats
- Experience keeping food quality high through transport, holding and reheating
- Confidence presenting to discerning clients, founders and senior stakeholders
A strong advantage
- Michelin-starred or comparable fine dining experience
- Private aviation, airline, yacht or large-scale events catering
- Restaurant or hotel openings and international, multi-site portfolios
