We are currently undertaking an exciting business transformation program, including the construction of a new multi-million-pound pool and spa (and other facilities)— set to be the finest in the Channel Islands. As part of this next phase of growth, we are seeking an experienced and qualified Sous Chef to join our culinary team at 1857 Bar and Restaurant.
This role is central to the smooth and professional operation of our kitchen, supporting the Head Chef in delivering exceptional food across our restaurant, private dining, weddings, corporate events, and hospitality functions. You will help maintain the highest culinary standards while ensuring efficient kitchen operations, outstanding food quality, and an exceptional guest experience.
Working closely with the Head Chef, front-of-house team, and wider management, you will support all aspects of kitchen operations, including food preparation, service delivery, menu execution, stock control, food safety compliance, and team development. This is a hands-on leadership role suited to an enthusiastic and ambitious chef who thrives in a fast-paced hospitality environment. You will play a key role in maintaining the reputation of 1857 Bar & Restaurant by delivering consistently outstanding food, supporting menu innovation, mentoring junior chefs, and ensuring every guest enjoys an exceptional dining experience.
The Responsibilities
- Support the Head Chef in the day-to-day running of the kitchen, ensuring consistently high standards of food quality and service.
- Prepare, cook, and present dishes in line with 1857 Bar & Restaurant specifications.
- Lead kitchen service, ensuring efficient delivery during restaurant service, functions, weddings, and events.
- Maintain excellent food hygiene, HACCP, allergen, COSHH, and Health & Safety standards.
- Assist with menu development, stock control, ordering, and waste reduction to support profitability.
- Monitor food quality, portion control, and presentation throughout service.
- Train, mentor, and support junior kitchen team members.
- Take responsibility for kitchen operations in the absence of the Head Chef.
- Work closely with the Front of House team to deliver an exceptional guest experience.
- Ensure kitchen equipment is used safely and maintained, reporting faults promptly.
- Support the successful delivery of all 1857 events and hospitality functions.
- Complete food safety records and maintain a clean, organised kitchen environment.
- Work flexibly, including evenings, weekends, and bank holidays, to meet business needs.
Experience / Qualifications / Education
- Previous experience as a Sous Chef, Junior Sous Chef, or Senior Chef de Partie in a quality hospitality environment.
- Strong knowledge of food preparation, kitchen operations, HACCP, food hygiene, allergens, and Health & Safety.
- Experience leading kitchen teams during busy service periods.
- Knowledge of stock control, ordering, food cost management, and waste reduction.
- Passion for delivering high-quality food with excellent attention to detail.
- Strong organisational, communication, and teamwork skills.
- Relevant Food Hygiene qualification (Level 2 minimum; Level 3 desirable).
- Professional cookery qualification or equivalent industry experience preferred.
