Role Description The Brewery Assistant / 2nd Brewer is a full-time, on-site role based in West Malling, supporting all aspects of brewery operations. Day-to-day responsibilities include assisting with wort production, fermentation management, and cellar work; cleaning and sanitizing tanks, lines, and equipment; and helping with packaging, including cask, keg, and bottling. The role also involves monitoring quality, recording brewing data, handling raw materials such as malt and hops, and ensuring health and safety standards are followed. The Brewery Assistant / 2nd Brewer will work closely with the Head Brewer to test new recipes, maintain consistent beer quality, and support deliveries and stock management as needed.

Qualifications

  • Practical brewing skills, including basic knowledge of brewing processes, fermentation, and cellar work.
  • Strong attention to cleanliness and hygiene, with the ability to follow cleaning and sanitation procedures for tanks, lines, and work areas.
  • Basic understanding of quality control, record-keeping, and safe handling of brewing ingredients and chemicals.
  • Physical ability to lift and move sacks of malt, kegs, and other brewery materials, and to work on feet for extended periods.
  • Good communication and teamwork skills, with a collaborative approach in a small, hands-on brewery environment.
  • Genuine interest in craft beer, hops, and recipe development; curiosity about new and innovative beer styles.
  • Willingness to learn, follow instructions, and take on varied tasks as production demands change.
  • Previous experience in a brewery or beverage production environment is beneficial but not required.
  • Relevant brewing or food production training, or a qualification in brewing, science, or a related field, is an advantage.
