Aim
To lead the global product and category strategy for a premium sushi retailer, driving commercial performance through strategic range planning, assortment optimisation, pricing architecture, and innovation. This role balances high-level strategic thinking with hands-on execution across multiple markets.
Key Responsibilities:
Category Strategy & Planning
- Develop and own the global category strategy aligned to brand values: Fresh, Quality, Handmade, Authentic
- Define and manage the product architecture across core, seasonal, and market-specific ranges
- Lead annual and quarterly range reviews, identifying gaps, opportunities, and rationalisation needs
Assortment & Range Management
- Build and maintain a balanced assortment across formats (grab-and-go, platters, bento, hot food, poke)
- Collaborate with NPD and culinary teams to deliver seasonal innovation and market-relevant launches
- Ensure consistency in quality and brand positioning across all SKUs
Pricing & Commercial Performance
- Develop and implement pricing strategies that drive volume, margin, and value perception
- Monitor competitor pricing and market trends to inform tactical and strategic pricing decisions
- Partner with finance and analytics teams to track category performance and optimize AOV
Market & Consumer Insights
- Leverage global and local insights to inform category decisions and product development
- Understand regional eating behaviours, cultural moments, and seasonal preferences
- Translate insights into actionable plans for assortment, pricing, and promotional activity
Cross-Functional Leadership
- Work closely with NPD, BI, marketing, operations, supply chain, and retail teams to ensure seamless execution
- Lead category planning sessions with regional teams to align on strategy and execution
- Act as the voice of the category in leadership forums and strategic planning cycles
Experience & Skills Required
- 7+ years in category management, product strategy, or merchandising in food retail or FMCG
- Proven experience in multi-market product leadership
- Strong commercial acumen and analytical skills
- Deep understanding of food trends, consumer behaviour, and pricing strategy
- Excellent stakeholder management and cross-functional collaboration
- Passion for Asian cuisine and premium food retail is a plus
