Jul’s London is seeking a skilled and detail-driven Pastry Chef de Partie to join our pastry team in a high-end Mediterranean fine dining environment. You will execute refined plated desserts and pastry components inspired by Mediterranean flavours and seasonal ingredients, maintain an immaculate station, and support the Head Pastry Chef in delivering an exceptional guest experience.
Key Responsibilities
- Execute daily pastry and plated dessert production to the highest fine dining standards
- Follow recipes with precision and contribute to specials while maintaining consistency and quality
- Temper and work with chocolate, including ganaches, pralines, and confections
- Maintain mise en place, inventory accuracy, FIFO stock rotation, and waste control
- Support the training and supervision of junior pastry cooks and interns
- Uphold impeccable hygiene, food safety, and allergen compliance (HACCP) within the pastry section
- Collaborate with the Head Chef and Executive Chef on menu development, plating, and seasonal changes
