COYA is a worldwide renowned luxury lifestyle hospitality brand with venues in London; Mayfair and City, Monaco, Mykonos, Dubai, Abu-Dhabi, Doha, Riyadh, Oman, St Tropez, Barcelona and Marbella. Born from the spirit of an adventure, COYA celebrates Latin American culture through delicious Peruvian food, innovative cocktails, music, art and happenings.

We are currently looking for an experienced Head Sommelier to join COYA. This is a seasonal position and advertised for future openings.

Experience you will need:

  • Certified sommelier or successfully completed equivalent of WSET, Level 3 would be preferable
  • Solid knowledge of French and New World wines (South American and North American wines in particular would be advantageous)
  • Attention to detail with good customer service
  • A team player, pro‐active with a can‐do attitude
  • Ability to work under pressure
  • Good command and understanding of English and Spanish with the ability to communicate confidently
  • Committed to personal development and a passion for working with people

Responsibilities:

  • Compose wine list to achieve maximum guest satisfaction, profit, prestige and trade recognition in line with the current trends
  • Creating, maintaining and developing wine stocks, wine sales and wine lists according to the company direction
  • Strive to meet target cost of sales and ensure that all employees are aware of the targets in the wine department, including the monthly sales target
  • Review and analyse sales to ensure stock rotation and profitability remains within targets. Rectify any stock issues, justify both external and internal transfers, wastages and price differences
  • Source wines and establish strong relationships with key wine suppliers and to manage them effectively
  • Manage all wine administration so that all is well organized and up-to-date and the account is cleared
