We are seeking a skilled Wholesale Butcher to join our team; maximising efficiencies across the butchery operation, working with purpose and initiative, operating the equipment, contributing to team KPIs and processing & creation of meat products. The ideal candidate will possess a strong background in food production and preparation, with a focus on maintaining the highest standards of food safety. As a Butcher, you will play a crucial role in ensuring that our customers receive high-quality meat products while adhering to all health regulations.
Jones is a family run catering butchers (est. 1962), with a close-knit team of butchers, production operators, warehouse assistants and delivery drivers, supplying meats from around the world to London and the Home Counties. Reports into our Butchery Manager.
Responsibilities:
- Follow daily workflow within the butchery.
- Prepare and cut various types of meat, including beef, pork, lamb, and poultry, according to specifications.
- Whole carcass breakdown.
- Operate butchery machinery i.e. the bandsaw, to produce required meat products for upcoming orders and stock replenishment.
- Use specs, recipe and stock management systems accurately to ensure all items are to spec and full traceability on all products.
- Understand our range of meat products and be able to identify items not to spec.
- Weigh, pack and seal products accurately, to spec and efficiently.
- Maintain cleanliness of the Butchery.
- Maintain all butchery equipment and report any issues to the General Manager in a timely manner.
- Assist with inventory taking and stock rotation.
- Participate in training relevant to your role and ensure all aspects are understood and put into practice.
- Identify any gaps in knowledge and understanding and seek support from the management team.
- Understand, follow and maintain quality assurance and food safety protocols within the Butchery.
