About Us

Jollof Junction is a growing West African street-food brand serving bold, authentic jollof rice, grills and sides to busy London food halls. We're expanding to a third outlet and need a hands-on manager to run one of our sites day to day.

About the role

  • You'll own the performance of your outlet: the team, food production, the customer experience and the numbers.
  • Run daily operations: opening, closing, cash-up and handover.
  • Plan daily production quantities from sales forecasts, so food is ready before opening and waste stays low.
  • Lead the team through morning food preparation and cooking to our recipes, portions and quality standards.
  • Make sure food is cooked, cooled, held and reheated safely, with temperature and HACCP records kept up to date.
  • Lead, train and motivate a team of production & sales assistants.
  • Build the weekly staff rota, including prep shifts, and manage holidays and absence.
  • Keep food safety, allergen and hygiene standards at 5-star level.
  • Order stock, manage deliveries and rotate stock correctly.
  • Track daily sales, labour cost and food cost, and report weekly to the director.
  • Handle customer feedback and online reviews.
  • Manage delivery-platform orders (Uber Eats and others) so they go out fast and accurate.
  • Work with the landlord's site team on events, promotions and compliance.

What we're looking for

  • At least 2 years' supervisory or management experience in a restaurant, takeaway, café or QSR.
  • Kitchen experience: food preparation, batch cooking and managing a prep schedule.
  • Level 2 Food Hygiene certificate (Level 3 is a plus).
  • Confident with rotas, stock control and basic numbers.
  • Calm under pressure and a natural people leader.
  • Love for West African food is a big plus.
  • Right to work in the UK.

Competitive salary plus a performance bonus.

28 days' paid holiday (including bank holidays).

Free staff meal on every shift.

The chance to grow with a young brand opening new sites.
