We invite you to join the world of luxury hospitality at Fairmont Southampton as our new Stewarding / Set‑Up. Reporting to the Stewarding Supervisor / Assistant Chief Steward, the Stewarding / Set‑Up is responsible for maintaining cleanliness, organization, and proper setup of all food and beverage operational areas across Fairmont Southampton. This includes kitchens, restaurants, banqueting and event spaces, beach venues, and back‑of‑house areas. This role supports culinary and banqueting teams by ensuring all equipment, venues, and service areas are prepared to the highest standards of hygiene, safety, and presentation in line with Fairmont and Accor brand standards.

What you will be doing:

  • Stewarding & Cleaning Operations
    • Clean, sanitize, and maintain kitchen areas, including dishwashing and pot‑washing operations, sinks, floors, and food preparation equipment.
    • Operate and maintain dishwashers and pot‑washers according to safety and operational guidelines.
    • Wash, polish, and store dishes, silverware, glassware, and kitchen equipment to established standards.
    • Ensure cleanliness and proper maintenance of all work areas, utensils, and equipment throughout the shift.
    • Clean and maintain designated washroom areas associated with food and beverage operations.
    • Safely use, clean, and maintain food and equipment trolleys, carts, and delivery equipment to ensure hygienic, organized, and efficient movement of items across all food and beverage areas.
    • Handle equipment and supplies carefully to minimize breakage, loss, and damage.
  • Set‑Up & Event Support
    • Set up restaurants before, during, and after service, ensuring dining areas meet presentation and service standards.
    • Support banquet, catering, and special event setups according to designated specifications and event orders.
    • Assist with beach function setups, ensuring safe, clean, and well‑organized service areas.
    • Collect, clean, and store all food and beverage equipment following service, ensuring accurate inventory and proper storage.
  • Waste Management & Sustainability
    • Handle all aspects of waste management for food and beverage operations, including proper sorting, disposal, and maintenance of dumpster areas.
    • Maintain proper rotation of products and supplies to minimize waste and spoilage.
    • Follow environmentally responsible practices in line with hotel sustainability initiatives.
  • Safety, Hygiene & Compliance
    • Correctly handle and store cleaning chemicals in accordance with safety data sheets and hotel standards.
    • Follow all health, safety, sanitation, and food hygiene procedures.
    • Maintain a safe and sanitary work environment at all times.
    • Maintain professional appearance, grooming standards, and conduct at all times.
    • Follow hotel fire, emergency, and evacuation procedures and report any concerns immediately.
    • Report any maintenance issues, safety hazards, or equipment malfunctions to the Stewarding Supervisor.
  • Operational Support & Teamwork
    • Replenish kitchen, restaurant, and banqueting supplies as required.
    • Work collaboratively with culinary, banqueting, and food and beverage teams to ensure smooth operations.
    • Assist with basic outdoor venue upkeep, including monitoring and watering flower beds for dining venues as required.
    • Perform other reasonable duties as assigned to support food and beverage operations.

Qualifications

  • Experience
    • Minimum of 2 years’ experience in stewarding, kitchen support, public area cleaning, or setup operations; luxury hotel or resort experience is an asset.
    • Experience supporting kitchen, restaurant, banquet, or event operations preferred.
  • Education
    • High school diploma or equivalent preferred.
    • Food safety or hygiene certification is an asset or willingness to obtain.
  • Competencies, Knowledge & Skills
    • Strong understanding of cleaning techniques, sanitation, and food safety standards.
    • Ability to operate dishwashing and cleaning equipment safely and efficiently.
    • Strong organizational skills with attention to detail.
    • Ability to work quickly and effectively in a fast‑paced environment.
    • Ability to work independently and collaboratively as part of a team.
