The Stablehand is a gastropub in Hyde Park serving proudly British, locally sourced food. We have built an excellent reputation with the local community and with overseas travellers, who know that exceptional British food truly exists. Located just two minutes from Hyde Park and Lancaster Gate Underground Station, and five minutes from Paddington, we offer honest food and warm hospitality – the kind of welcome you would expect at home.

The Kitchen Manager is responsible for leading the kitchen at The Stablehand, ensuring the consistent delivery of high-quality British food in a fast-paced gastropub environment. Working closely with the Restaurant Manager and the Group Senior Head Chef, you will oversee daily kitchen operations, manage the kitchen team, maintain high standards, and ensure the food leaving the kitchen reflects the quality and reputation of The Stablehand. You will bring a passion for British produce, traditional techniques, and honest cooking, while maintaining strong organisation, discipline, and teamwork within the kitchen. Once you've proved your worth, you will be able to participate in menu planning.

Key Responsibilities
  • Lead the day-to-day operations of the kitchen, ensuring efficient and well-organised service.
  • Meet clear GP expectations, with a constant eye on costs, using seasonal produce.
  • Manage and develop the kitchen team, creating a positive and professional working environment.
  • Work closely with the Restaurant Manager to ensure smooth communication between kitchen and front-of-house.
  • Collaborate with the Group Senior Head Chef on menu development, standards, and consistency across the group.
  • Maintain high standards of food quality, presentation, and consistency.
  • Manage stock, ordering, and kitchen costs effectively.
  • Ensure full compliance with food safety, hygiene, and health regulations.
  • Train and develop junior kitchen staff.
Candidate Profile
  • Previous experience as a Kitchen Manager, chef or second in a brigade of at least 5, in a gastropub or restaurant environment.
  • A strong passion for British cuisine and seasonal, locally sourced ingredients.
  • Strong leadership and organisational skills.
  • The ability to run a calm, efficient kitchen during busy services.
  • A professional attitude and strong attention to detail.
  • Excellent communication and teamwork skills.
Support

You will work closely with the Restaurant Manager and receive guidance and support on a daily basis from the Group Senior Head Chef, who oversees food standards and development across the group. Head office provides additional support with administration, GP tracking and HR management, allowing the kitchen team to focus on delivering excellent food and service.
