Giggling Squid is one of the UK's most loved Thai eating houses. Founded by Andy and Pranee Laurillard, it has grown to become the nation's largest Thai restaurant group, with 52 restaurants across the country. Built on bold, authentic Thai food, warm hospitality, and a dining experience that feels genuinely different. We’re at an exciting chapter in our journey. We have a delivery business we’re determined to double, and a true commercial leadership role at the heart of it. If you want to work somewhere with big energy, exceptional food, and room to make your mark, you’re in the right place.
The Role
As Senior Delivery Manager, you will be the first specialist in this space at Giggling Squid. This is a rare opportunity to own the delivery channel end to end, with direct CEO visibility, and genuine room to grow with the business. You will take full ownership of a multi‑million‑pound channel with a clear mandate to double it, set the strategic vision, lead our relationship with Deliveroo’s Casual Dining team, and build and develop a team as the channel scales.
What You Will Do
- Commercial ownership: Own the Deliveroo P&L across the full estate and support with setting revenue targets. Lead joint business planning with the Head of Marketing and Deliveroo’s Casual Dining team. Own performance reporting across the estate, tracking key metrics weekly and monthly, translating data into clear commercial recommendations, and leading quarterly reviews with the CEO. Actively manage our Value Programme score to improve in‑app visibility and ranking across all sites.
- Menu and proposition: Own the delivery menu architecture across the estate, driving consistency, channel optimisation, and clear commercial rationale for every listing. Design and test delivery‑specific propositions: bundles, exclusive menu innovation, and promotions. Lead the rollout of new branded packaging across the estate, ensuring a consistent and premium delivery experience from kitchen to doorstep.
- Growth: Own the commercial growth agenda for the channel, identifying and leading new opportunities as the business scales. Run a structured test‑learn programme across the estate so every major decision is evidence‑based. Lead the expansion of our delivery presence into new locations and formats. Manage day to day platform operations across Partner Hub, ensuring listings, pricing, and promotions are always accurate and optimised.
- Team and stakeholders: Build, lead, and inspire the delivery function. Work closely with the Operations Director, Area Managers, and Trainers, monitoring site‑level performance data, and maintaining a clear feedback loop between delivery and the restaurant estate.
What We Are Looking For
You will have significant experience in a delivery or aggregator role, ideally within a restaurant group or at Deliveroo, Uber Eats, or Just Eat. We are looking for someone who brings:
- Deep knowledge of how Deliveroo works: Partner Hub, in‑app ranking, the Value Programme, and the commercial levers that move performance.
- A track record of growing a delivery channel and hitting commercial targets.
- Experience building menus and propositions bespoke to the delivery channel.
- Confident negotiating and managing senior external relationships.
- Someone who can walk into a Deliveroo commercial review in the morning and be in Partner Hub fixing a menu listing in the afternoon.
Commercial acumen, platform expertise, and real drive to build something are what matter most.
