The Rye Bakery is an independent family-owned bakery established in 1989. We operate cafés in Bexhill-on-Sea, Hawkhurst, Ore, Hastings & St Leonards-On-Sea as well as a bakery and wholesale bread business in Peasmarsh, Near Rye.
Job Summary:
As a night baker you will be responsible for the preparation and baking of various bakery products during night time hours, ensuring that fresh and high-quality goods are available for customers in the morning. This role involves working independently or as part of a small team to follow recipes, maintain cleanliness and organisation in the bakery, and uphold food safety standards.
Work Schedule:
Days: 5 (Sun- Fri)
Shift Start Time: 3pm
Shift Duration: 9 hours (Mandatory 45-minute break is automatically removed)
Total Weekly Hours: 41.25 hours (paid)
Salary: Dependent on experience
Responsibilities:
- Prepare and bake a variety of bakery products such as bread, pastries, cakes, and desserts according to established recipes and production schedules.
- Weigh and measure ingredients accurately, mixing dough, and monitoring fermentation processes to achieve desired consistency and flavour.
- Operate baking equipment including ovens, mixers, dough sheeters, and proving cabinets, ensuring proper settings and temperatures are maintained.
- Shape dough into various forms, such as loaves, rolls, or pastries, and decorate or glaze finished products as needed.
- Monitor baking times and adjust oven temperatures as necessary to ensure products are baked to perfection.
- Inspect finished products for quality, appearance, and taste, discarding any items that do not meet standards.
- Clean and sanitise workstations, equipment, and utensils following food safety guidelines to prevent cross-contamination and ensure a hygienic work environment.
- Maintain inventory of ingredients and supplies, notifying supervisors when stock levels are low and assisting with ordering as needed.
- Follow proper storage procedures for perishable and non-perishable ingredients to minimize waste and ensure freshness.
- Collaborate with other bakery staff and managers to coordinate production schedules and fulfil customer orders in a timely manner.
- Adhere to all health and safety regulations, including wearing appropriate protective clothing and following proper sanitation procedures.
Qualifications:
- Previous experience working in a bakery is essential.
- Knowledge of baking techniques, ingredient measurements, and recipe execution.
- Strong attention to detail and commitment to producing high-quality products.
- Excellent organisational and time management skills.
- Flexibility to work overnight shifts, weekends, and bank holidays as required.
- Physical stamina to stand for extended periods and lift heavy objects (up to 50 pounds).
- Basic math skills for measuring ingredients and calculating recipe proportions.
- Positive attitude and willingness to work as part of a team.
