JWR is delighted to be recruiting for an experienced Sous Chef on behalf of a well-established hotel and restaurant operation in Somerset. The Role

As Sous Chef, you will work closely with the Head Chef to oversee the day-to-day operation of the kitchen, ensuring high standards of food quality, consistency, and service are maintained at all times. You will:

  • Support the daily management of the kitchen operation
  • Lead the brigade in the Head Chef's absence
  • Assist in managing, motivating and developing a team of up to 10 chefs and kitchen staff
  • Ensure consistently high standards of food preparation and presentation
  • Support menu implementation and seasonal food development
  • Monitor kitchen performance and contribute to continuous improvement
  • Maintain excellent food hygiene, health & safety and stock control procedures
  • Manage ordering, storage and stock rotation effectively
  • Coach and mentor junior members of the brigade
  • Help create a positive, professional and high-performing kitchen culture

Requirements

We are seeking a chef who:

  • Has previous experience as a Sous Chef or strong Junior Sous Chef within a fresh-food operation
  • Thrives in a busy, fast-paced kitchen environment
  • Demonstrates strong leadership and communication skills
  • Is passionate about food quality and guest satisfaction
  • Leads by example and inspires those around them
  • Has excellent organisational and time management abilities
  • Holds a Level 2 Food Hygiene qualification
  • Is ambitious, hands-on and eager to continue developing their career
  • Maintains high standards under pressure
