JWR is delighted to be recruiting an exceptional Restaurant Manager for a luxury hotel and its Michelin-starred fine dining restaurant in the heart of Somerset. This is a rare opportunity to lead one of the area's most celebrated dining rooms, where refined service, culinary excellence, and warm hospitality come together under one roof.

The Role

As Restaurant Manager, you will be the driving force behind the day-to-day operation of a high-end, Michelin-starred restaurant within a prestigious hotel environment. You will set the tone on the floor, inspire your team, and ensure every guest experience is polished, personal, and memorable.

Key Responsibilities

  • Lead, motivate, and develop a professional front-of-house team
  • Deliver exceptional guest service that reflects Michelin-level standards
  • Oversee daily operations, rotas, staffing levels, and training
  • Work closely with the Head Chef and senior hotel management to ensure seamless service
  • Maintain high standards of presentation, compliance, and operational excellence
  • Handle guest feedback with confidence, care, and professionalism

Requirements

  • Proven experience as a Restaurant Manager or senior FOH leader in fine dining or Michelin-starred restaurants. Minimum 3 Rosette
  • Passionate about service, hospitality, and creating outstanding guest journeys
  • A confident leader with a calm, hands-on approach
  • Strong organisational and communication skills
  • Commercially aware, with experience managing costs, staffing, and service standards
  • Extensive wine and mixology knowledge. WSET Level 2 minimum
