JWR is delighted to be recruiting for a senior Food & Beverage Operations Manager to lead two high-profile outlets within a luxury hotel in Exeter. This is a pivotal leadership role overseeing both an all-day dining restaurant and a premium rooftop bar, each with its own distinct identity but working together at the heart of the hotel's commercial offering. We are seeking a commercially astute operator who can balance hands-on leadership with strategic oversight, driving performance, consistency and long-term growth.

The Role
As Food & Beverage Operations Manager, you will take full accountability for the performance of both outlets, ensuring they operate as complementary, revenue-driving businesses. You will:
- Drive revenue growth, profitability and cost control across both outlets
- Analyse weekly and monthly performance, making informed commercial decisions
- Lead and structure service across all day parts, ensuring clarity, flow and consistency
- Develop a strong management team with clear accountability and ownership
- Work closely with the kitchen and hotel leadership to evolve the food and beverage offer
- Strengthen positioning within the local market, increasing both guest and local trade
- Maintain exceptional standards across compliance, stock control and operations
- Deputise for the General Manager when required
Requirements
We are looking for a well-rounded hospitality leader who brings both commercial awareness and operational credibility. You will:
- Have experience in a senior F&B role within a quality-led restaurant, bar or hotel environment
- Demonstrate strong financial understanding, including labour, cost control and margin management
