We are seeking an ambitious and talented Sous Chef to join our senior kitchen team and play a key role in maintaining the highest culinary standards.
The Role
As a Senior Sous Chef, you will work closely with the Head Chef in the day-to-day management of the kitchen, helping to lead, inspire, and develop the brigade. You will be passionate about fresh food, committed to excellence, and capable of running the kitchen confidently in the Head Chef's absence.
Key Responsibilities
- Support the Head Chef in all aspects of kitchen operations.
- Lead service and ensure dishes are consistently delivered to the highest standard.
- Assist in menu development, seasonal specials, and recipe creation.
- Champion the use of fresh, locally sourced ingredients.
- Train, mentor, and motivate junior chefs and kitchen staff.
- Manage stock control, ordering, and supplier relationships.
- Monitor food costs, wastage, and GP targets.
- Ensure compliance with all food safety, hygiene, and health & safety regulations.
- Maintain excellent kitchen organisation and cleanliness.
- Step into the Head Chef role when required.
Requirements
- Proven experience as a Sous Chef or strong Head Chef within a quality fresh-food restaurant or gastro pub.
- Passion for seasonal British produce and locally sourced ingredients.
- Strong leadership and team management skills.
- Excellent organisational and communication abilities.
- Must be flexible in working split & double shifts.
- Good understanding about food GP's & costs.
- Experience managing busy services in a high-quality dining environment.
- Good understanding of food cost control and kitchen financials.
- Level 2 Food Hygiene Certificate (minimum).
- A positive, hands-on attitude and strong work ethic.
- Full UK Driving Licence and own transport essential due to location.
