JWR is currently working with a renowned luxury country estate in Somerset looking to recruit an experienced Butchery Operations Manager to lead their state-of-the-art butchery facilities. This facility plays a central role in the estate's food production, providing high-quality products to estate dining outlets and local retailers.

Role Overview
As the Head of Production for Butchery, you'll oversee the day-to-day activities of the butchery facility and lead a skilled team of up to 9 staff. Your role will cover all aspects of meat processing, including raw, cured, and cooked meat production, packaging, and facility hygiene. Additionally, you'll have the opportunity to host educational workshops, where guests can learn about the estate's commitment to a sustainable, nose-to-tail approach to meat processing. This role is ideal for a seasoned butcher with a deep understanding of whole carcass butchery, experience in large-scale production, and a passion for product innovation.
Key Responsibilities
- Train, develop, and manage the butchery team
