Duties and Responsibilities
- Product Preparation, Processing & Presentation
- Expertly fillet, portion, and prepare fish and meat, including sashimi-grade fish and Japanese-style cuts.
- Prepare, trim, debone, fillet, portion, and package fish, seafood, poultry, and meat.
- Ensure all preparation meets company and industry standards.
- Prepare and garnish food according to presentation standards.
- Prepare sushi-grade fish following strict food safety procedures.
- Slice and portion fish for sushi, sashimi, nigiri, and other products.
- Assist in preparing and presenting products for retail display.
- Food Safety & Hygiene
- Follow all food safety training and safe handling practices.
- Adhere to HACCP principles and hygiene regulations.
- Monitor and record storage and display temperatures.
- Ensure proper handling, storage, labelling, and traceability.
- Inventory & Stock Management
- Receive, inspect, and verify deliveries.
- Maintain stock rotation using FIFO.
- Monitor stock levels and report shortages.
- Customer Service
- Provide expert advice on fish, meat, seafood, sushi, and sashimi.
- Assist customers with selection, preparation, and cooking advice.
- Handle special requests and bespoke orders professionally.
- Deliver excellent service to ensure customer satisfaction.
- Equipment Operation & Maintenance
- Safely operate knives, slicers, grinders, saws, scales, and other equipment.
- Ensure equipment is cleaned and maintained properly.
- Report faults or hazards immediately.
- Compliance & Safety
- Comply with company health and safety policies.
- Identify and report workplace hazards.
- Participate in ongoing training.
- Administration & Computer Work
- Complete department paperwork daily/weekly.
- Ensure legal checks are completed accurately.
