Job Description
As a Sushi Sous Chef, you will be the backbone of our sushi operations, ensuring the seamless execution of service while leading and inspiring your team.
You will work closely with the Head Chef to maintain quality and drive efficiency in the kitchen.
You’ll work on a fast-paced, sushi section, ensuring that every piece is crafted with precision, paying close attention to detail.
This position requires extensive understanding of sushi preparation, including fish cutting, rice preparation and ingredient handling as well as having strong management and teaching skills.
Responsibilities
- Ensuring correct prep levels to ensure freshness and to control wastage.
- Ensuring deliveries and stock are put away correctly by the Goods Receiver.
- Daily due diligence.
- Checking cleaning rotas are completed
- Ensure compliance with health and safety regulations.
- Train and mentor kitchen staff to maintain consistency and excellence.
- Assist in scheduling, staffing, and performance management of kitchen personnel.
- Support the Head Chef and Senior Sous Chef in maintaining a positive work environment.
- Ordering for the sushi section.
- Monitoring wastage and stock for Sushi.
Requirements
- Previous experience as a Sushi Sous Chef is a must.
- Ingredient expertise.
- Strong Knife skills and a deep understanding of sushi techniques.
- Leadership abilities with excellent communication and interpersonal skills.
- Ability to thrive in a fast-paced, high-pressure environment.
- Experience in working with a large kitchen team.
- Continuously keeping up to date with traditional and modern sushi methods.
