Responsibilities
- Assist with wastage, GP & Labour controls.
- Assist in scheduling, staffing, and performance management of kitchen personnel.
- Ensure that every dish is prepared and executed to the highest standards.
- Ensure correct prep levels by the dedicated prep team.
- Ensure deliveries and stock are put away correctly by the Goods Receiver.
- Precise ordering to ensure full menu availability and minimum wastage.
- Lead the team through positive and constructive methods.
- Daily due diligence.
- Look after staff wellbeing.
- Ensure compliance with health and safety regulations.
- Train and mentor kitchen staff to maintain high food standards.
- Pioneer a positive work environment and foster teamwork.
Requirements
- Previous experience as a Senior Sous Chef or similar role in a busy kitchen environment.
- Strong culinary skills and a passion for quality.
- Leadership abilities with excellent communication and interpersonal skills.
- Strong understanding of EBITDA & GP.
- Understanding PnL’s to make positive cuts increasing overall profit.
- Ability to thrive in a fast‑paced, high‑pressure environment.
- Experience in leading a large kitchen team.
