We are delighted to be opening Harry’s Glasgow later this year. Harry’s is where rustic charm meets culinary excellence, set amongst rich, dark wood interiors and inspired by the warmth of traditional Italian hospitality. Our restaurants are a celebration of authentic Italian flavours, with a particular focus on freshly made pasta and hand‑crafted pizzas, prepared with care, quality and attention to detail.
We are now looking for an exceptional Head Chef to lead our kitchen team from the very beginning. This is a unique opportunity to take full ownership of the kitchen operation, shaping the restaurant's culinary direction while building, developing, and inspiring a high‑performing brigade. As Head Chef, you will lead from the front, maintain the highest standards of food quality, drive performance through clear KPIs, and ensure operational excellence across all areas of the kitchen. Working closely with the General Manager, you will play a pivotal role in establishing a commercially successful, best‑in‑class operation and delivering an outstanding guest experience. Responsibilities
- Lead the team through positive and constructive methods.
- Achieve consistent GP results.
- Accurate labour forecast to ensure that targets are achieved.
- Maintain a high customer satisfaction score.
- Ensure the Prep Team & Goods receiver are following management instructions.
- Precise ordering to ensure full menu availability and minimum wastage.
- Ensure accurate daily due diligence.
- Look after staff wellbeing, working towards high staff retention.
- Ensure compliance with health and safety regulations.
- Train and mentor kitchen staff to maintain high food standards.
- Pioneer a positive work environment and foster teamwork.
Requirements
- Previous experience as a Head Chef or similar role in a busy kitchen environment.
- Strong culinary skills and a passion for quality and creativity.
- Leadership abilities with excellent communication and interpersonal skills.
- Complete understanding of EBITDA & GP.
- Understanding PnL’s to make positive cuts, increasing overall profit.
- Ability to thrive in a fast‑paced, high‑pressure environment.
- Experience in organising and leading a large kitchen team.
