Job Description:
As a Sushi Chef, you will be responsible for preparing a wide range of sushi & sashimi to the highest standards, showcasing your expertise in both traditional and modern techniques. Youβll work in a fast-paced, sushi section, ensuring that every piece is crafted with precision, creativity and attention to detail. The role requires a deep understanding of sushi preparation, knife skills and the ability to maintain high quality standards even during peak hours in an open plan sushi bar.

Responsibilities:
- Prepare and assemble sushi rolls, nigiri, sashimi, and other sushi dishes according to traditional recipes and standards.
- Ensure the highest standards of quality, flavour, and presentation in every sushi dish.
- Manage inventory of sushi ingredients and supplies, and coordinate ordering as needed.
- Maintain cleanliness and organi s ation of the sushi station, including sushi knives and other equipment.
- Uphold sushi-making techniques and standards.
Requirements:
- Proven experience as a Sushi Chef or similar role in a high-volume restaurant or sushi bar.
- Strong sushi-making skills with a focus on traditional techniques.
- Excellent knife skills and attention to detail.
- Ability to work efficiently under pressure in a fast-paced environment.
- Knowledge of sushi ingredients, sourcing, and quality control.
- Stay updated on sushi trends and techniques.
- Be able to remain calm and professional in an open kitchen.
