About Us It's Bagels is an artisan, New York-style bagel bakery serving fresh, hand-rolled bagels that are mixed, rolled, boiled and baked on site, alongside great coffee and warm, energetic hospitality.

The Role Our Bakers turn carefully prepared dough into the hot, fresh bagels our guests come for. This is a hands-on artisan production role involving proving, boiling, seeding, baking, quality control and bakery organisation.
You will be trusted with one of the most important standards in the business: the quality of the bagel itself. What You'll Do:

- Prepare the bakery for production and follow the daily bake plan and pars.
- Assess proofing and product readiness before boiling and baking.
- Boil, seed and bake bagels using the correct methods, temperatures and timings.
- Monitor bake colour, texture, shape and overall quality throughout production.
- Follow recipes and production processes exactly, escalating anything that is not behaving as expected.
- Keep enough fresh product available for trade and communicate shortages or production risks immediately.
- Record production, wastage and other required checks accurately.
- Maintain excellent food safety, hygiene and allergen controls in the bakery.
- Complete daily and weekly bakery cleaning, including equipment and work areas.
- Care for boards, tools, ovens and bakery equipment correctly.
- Work closely with rollers and the shop team so production matches guest demand.
- Support training and quality feedback as your experience develops.

What We're Looking For:
- Previous bakery, kitchen, food production or high-volume hospitality experience is desirable.
- Comfortable working with ovens, hot water and a physically demanding production environment.
- Strong attention to recipes, timings, temperatures and product quality.
- Food safety awareness and disciplined hygiene habits.
- Reliable and punctual - early bakery starts are essential.
- Able to work calmly and methodically while maintaining production pace.
- Confident communicating when quality, equipment or stock is not right.
- Pride in handmade food and a desire to master the craft.

Working Pattern Bakers work early shifts, commonly beginning in the early morning so production is ready for trade. The start times of these shifts vary between 4am and 5:30am so please ensure you are able to travel to arrive for those shift start times.
Weekend availability is required.
