The Role

  • Support the Executive Chef in leading all hospitality kitchens across the building.
  • Lead daily service across premium meeting rooms, boardroom dining, executive lunches, and events including canapés, hot fork buffets, and plated menus.
  • Maintain Michelin-level standards of mise-en-place, cleanliness, organisation, and documentation.
  • Train, coach, and motivate the brigade to consistently deliver high culinary standards.
  • Support menu development, tasting sessions, and seasonal innovation.
  • Manage ordering, stock control, gross profit targets, and waste reduction in line with ISS processes.
  • Work collaboratively with front-of-house, client teams, and central ISS support functions.
  • Deputise for the Executive Chef when required, ensuring smooth kitchen operations.

Qualifications & Experience

  • Experience in Michelin-starred, AA Rosette, 5-star hotel or equivalent premium hospitality environments.
  • Confident in leading teams and managing kitchen operations in the Executive Chef’s absence.
  • Comfortable working across multiple styles of cookery throughout the day.
  • Strong understanding of food safety, allergen management, and compliance documentation.
  • Professional, calm, and solutions-focused under pressure.
  • Strong work ethic, positive attitude, and willingness to learn and develop.
  • Ability to thrive in a high-profile, fast-paced, detail-driven environment.
