The Senior Restaurant Manager is responsible for overseeing the overall operations of one or multiple restaurant outlets in Singapore, ensuring operational excellence, high service standards, profitability, and full compliance with local regulatory, food safety, safety, and halal certification requirements. This role provides leadership to restaurant management teams, drives business performance, and ensures a consistently positive guest experience in accordance with Singapore regulations and company standards.

Key Responsibilities

  • Operations Management
    • Oversee daily restaurant operations to ensure smooth, efficient, and compliant service across all outlets.
    • Implement and enforce Standard Operating Procedures (SOPs) in line with Singapore Food Agency (SFA), National Environment Agency (NEA), Ministry of Manpower (MOM), and company requirements.
    • Ensure food quality, hygiene, cleanliness, and safety standards are consistently met, including compliance with SFA Food Safety Management Systems (FSMS).
    • Coordinate closely with kitchen and service teams to maintain operational efficiency and service standards.
  • Leadership & People Management
    • Lead, mentor, and supervise Restaurant Managers, Supervisors, and key operational staff.
    • Plan manpower requirements, staff scheduling, and deployment in compliance with MOM Employment Act and rest day/working hour regulations.
    • Ensure proper onboarding, training, and performance evaluation of staff.
    • Handle disciplinary matters in accordance with MOM guidelines and company HR policies.
    • Foster a positive, inclusive, and safe work culture aligned with Workplace Safety and Health (WSH) standards.
  • Financial & Business Performance
    • Manage budgets, cost control, and outlet profitability targets.
    • Monitor sales performance, labour costs, food costs, and wastage.
    • Analyse financial and operational reports and implement corrective actions to improve revenue and margins.
    • Oversee cash handling procedures, daily sales reconciliation, procurement, and inventory control.
  • Customer Experience
    • Ensure high standards of customer service and guest satisfaction across all outlets.
    • Handle escalated customer feedback and complaints professionally and in a timely manner.
    • Implement service improvement initiatives based on customer feedback and operational reviews.
  • Compliance & Regulatory
    • Ensure full compliance with SFA licensing conditions, NEA environmental health requirements, and WSH regulations.
    • Oversee and prepare for regulatory inspections, audits, and corrective action plans.
    • Ensure all outlets maintain valid food shop licences and comply with cleaning, pest control, and waste management requirements.
  • Halal Compliance & Assurance
    • Ensure strict adherence to halal-certified operational requirements in accordance with Majlis Ugama Islam Singapura (MUIS) standards.
    • Oversee halal assurance systems, including segregation of halal ingredients, utensils, storage, and preparation areas.
    • Ensure halal documentation, supplier certifications, and records are properly maintained and up to date.
    • Conduct regular internal halal audits and staff briefings to maintain halal integrity.
    • Act as the main liaison with MUIS or appointed halal consultants for certification, renewal, and compliance matters.
  • Strategic & Administrative Duties
    • Support management in business planning, outlet expansion, and new outlet openings in Singapore.
    • Prepare operational, compliance, and performance reports for senior management.
    • Coordinate with suppliers, vendors, contractors, and external service providers.
    • Support marketing, promotional activities, and brand initiatives while ensuring regulatory and halal compliance.
