Your role as Kitchen Manager is responsible for the smooth running of the kitchen by leading the BOH staff and implementing standards and procedures to serve delicious meals for our guests. To implement and monitor the required processes that meet the food and health safety requirements for our brand. Our passion for food comes from the Mediterranean lifestyle where a meal means sitting down with family and friends and sharing laughter, stories and bountiful food.

Responsibilities:

  • Food:
  • Cooks the best food to set standards.
  • Produces food in a timely fashion.
  • Follows food SOPs guidelines.
  • Oversees all preparation of food to the highest standard.
  • Works in the Kitchen during peak trade.
  • Kitchen Procedures:
    • Opening and closing rituals for BOH.
    • Ensure correct prep is planned and executed by the team.
    • Stock ordering (Head Office and local supplies).
    • Execute and monitor health and safety activities of BOH crew.
    • Keeping all equipment in clean and good working order (fridges, fryers, grill tops, coffee machine etc.).
    • Arranges servicing of equipment as set out in the SOP.
  • Product:
    • Makes sure that product is received and stored according to SOP.
    • Conducts ad hoc quality checks on all aspects of food preparation from issuing stock to the finished product.
    • Raises any supplier quality issues with the Restaurant Manager.
  • Staff Activities:
    • Plans the BOH staff rota.
    • Accountable for morning meetings and briefing all BOH crew on a set list of guidelines for the day.
    • Conducts weekly team meetings with the BOH crew.
    • Prepares daily areas of focus points to BOH crew (incentives and par level achievements).
    • Conducts monthly check-ins with management.
    • Coaches crew in the daily operations as set out by SOP.
    • Participates in recruitment for BOH crew.
    • Supports onboarding and training of new starters.
  • Compliance:
    • Conducts BOH audits with the team, and implements corrective action initiatives, set out by SOP.
    • Accountable for the recording and reporting of any other compliance requirements.
    • Reports any equipment and/or building fabric faults and any hygiene, health and safety hazard to the Restaurant Manager.
    • Keeps Health & Food safety standards at 100%.
