Job Description:
We are the leading venison and game supplier in Edinburgh and the Central Belt for high-end customers, both trade and public. Supplying multiple Michelin starred restaurants and fine dining establishments in and around Edinburgh. As a young and dynamic team with professional hospitality backgrounds we take the Field to Fork approach seriously where the right candidate is an essential part of the whole supply chain.About the roleThis very unique role is a fantastic opportunity with a vast range of duties and responsibilities. Those include the preparation of different types of meat and game. Core tasks include skinning, boning, cutting, trimming of venison, mechanically plucking game birds, trimming and cutting beef/pork/poultry, product presentation, recipe development, serving customers, all while maintaining high company standards. A role one can´t find anywhere else.
Experience And Qualifications:
Butchery- All systems of booking in game to be managed by the candidate- Applicants have a background in butchery but full additional training will be given on all aspects of the duties involved as well as training given on hygiene involving food preparationThe main areas we are looking for in the candidate themselves are•good communication skills•flexible approach•full driving license•good sense of humour•be physically fit for the role
