With locations on each of our 8 award-winning ships, Palo offers a refined dining experience inspired by the flavours and elegance of Italy, serving approximately 150 guests per service across dinner and select sea-day brunches.

As Chef de Cuisine, you will lead a passionate culinary brigade at sea, delivering consistently exceptional dining while cruising to unforgettable destinations from the Caribbean and Alaska to South America, the Mediterranean, and beyond.

What You’ll Be Doing
  • Leading a dedicated team of 78 chefs in all aspects of Palo's kitchen operations
  • Overseeing food preparation, presentation, and menu execution in a fine dining environment
  • Managing food costs, inventory, menu audits, and quality control
  • Training, coaching, and mentoring team members to uphold Disney's high culinary standards
  • Collaborating with Palo leadership to maintain and evolve the restaurant's modern Italian identity
What We’re Looking For
  • Minimum 3-5 years of leadership experience in fine dining, preferably with European/Italian cuisine
  • Strong operational knowledge of kitchen management, food safety, and cost control
  • A passion for culinary creativity, team development, and guest satisfaction
  • Excellent organisational and communication skills
