Key Responsibilities
- Lead and manage all kitchen operations, ensuring smooth daily service.
- Design, develop, and maintain authentic Italian and Mediterranean menus.
- Oversee the preparation and presentation of all dishes and pizzas to ensure consistency and quality.
- Train, motivate, and supervise kitchen staff, fostering a positive and productive working environment.
- Manage stock control, ordering, supplier relationships, and inventory management.
- Monitor food costs, portion control, and kitchen efficiency to achieve financial targets.
- Ensure full compliance with food safety, hygiene, and health & safety regulations.
- Develop seasonal specials and menu innovations while maintaining the restaurant's identity.
- Schedule kitchen staff and manage labour costs effectively.
- Maintain cleanliness, organisation, and high operational standards throughout the kitchen.
- Collaborate with management to improve customer satisfaction and business performance.
Requirements
- Proven experience as a Head Chef or Senior Sous Chef within an Italian, Mediterranean, or pizzeria-focused restaurant.
- Strong knowledge of traditional Italian cuisine, Mediterranean cooking techniques, and artisan pizza preparation.
- Excellent leadership, communication, and team management skills.
- Experience in menu planning, food costing, and kitchen budgeting.
- Strong understanding of food safety legislation and HACCP procedures.
- Ability to work under pressure in a fast-paced environment.
- Passion for high-quality ingredients and authentic culinary standards.
- Flexibility to work evenings, weekends, and public holidays as required.
Desirable Qualifications
- Professional culinary qualification or equivalent experience.
- Food Hygiene Certificate (Level 3 or higher).
- Experience with wood-fired or traditional Italian pizza ovens.
