Key Responsibilities

  • Lead and manage all kitchen operations, ensuring smooth daily service.
  • Design, develop, and maintain authentic Italian and Mediterranean menus.
  • Oversee the preparation and presentation of all dishes and pizzas to ensure consistency and quality.
  • Train, motivate, and supervise kitchen staff, fostering a positive and productive working environment.
  • Manage stock control, ordering, supplier relationships, and inventory management.
  • Monitor food costs, portion control, and kitchen efficiency to achieve financial targets.
  • Ensure full compliance with food safety, hygiene, and health & safety regulations.
  • Develop seasonal specials and menu innovations while maintaining the restaurant's identity.
  • Schedule kitchen staff and manage labour costs effectively.
  • Maintain cleanliness, organisation, and high operational standards throughout the kitchen.
  • Collaborate with management to improve customer satisfaction and business performance.

Requirements

  • Proven experience as a Head Chef or Senior Sous Chef within an Italian, Mediterranean, or pizzeria-focused restaurant.
  • Strong knowledge of traditional Italian cuisine, Mediterranean cooking techniques, and artisan pizza preparation.
  • Excellent leadership, communication, and team management skills.
  • Experience in menu planning, food costing, and kitchen budgeting.
  • Strong understanding of food safety legislation and HACCP procedures.
  • Ability to work under pressure in a fast-paced environment.
  • Passion for high-quality ingredients and authentic culinary standards.
  • Flexibility to work evenings, weekends, and public holidays as required.

Desirable Qualifications

  • Professional culinary qualification or equivalent experience.
  • Food Hygiene Certificate (Level 3 or higher).
  • Experience with wood-fired or traditional Italian pizza ovens.
